Coach AMBER’s Story
Amber grew up on a hobby farm in Minnesota, stacking hay bales once she was taller than them. Her family grew and preserved most of their food - grocery shopping was going out to the garden in summer or down to the basement for canned produce in winter.
When she was in college for acting in Dublin, Ireland, in 2002 (during the foot and mouth and mad cow epidemics), she stopped eating all meat and hasn’t looked back. Years later, while living in Chicago, she realized she was almost vegan and consciously made the switch to a fully vegan lifestyle around 2012.
After college, she worked as an actress and dancer, performing in companies and show tours in Greece, Ireland & UK, Mexico, and finally in Chicago where she retired her dance career. In 2017, she trained in Italy in commedia dell’arte and continued acting and teaching acting until the COVID pandemic in 2020.
As Amber neared retirement as a dancer, she completed her yoga teacher training in Costa Rica with Frog Lotus International in 2008. She’s taught yoga since then and took an unexpected turn to coach boxing in 2019, and finally to personal training and nutrition coaching.
Amber’s life interests now include surfing by the ocean, training for a long life of unknown adventures, and painting and sculpting. She has a beautiful (vegan) dog, Brooke, a 10-year-old black lab pit bull mix rescue.
