Tofu Summer Rolls

Directions

  1. Dip each of your 3 rice paper wraps into a bowl of water and lay them flat on a large cutting board.

  2. Slice β…“ block of super firm tofu (182g) and Β½ small cucumber (85g) into Β½-inch strips. Slice ΒΌ of an avocado (34g) into thin strips and scoop them out with a spoon.

  3. Divide these between the 3 rice paper wraps, placing them closer to the top edge for easier rolling.

  4. Add Β½ cup of matchstick carrots (30g) and a few sprigs of fresh cilantro evenly between the 3 rolls.

  5. Fold in the sides of each rice paper wrap, then tuck and roll tightly to close. Repeat for all 3 wraps.

  6. Pour 2 Tbsp. (30g) of coconut aminos into a small bowl for dipping. Enjoy!
