elke’s Story

Elke has been vegan since 2015 and has a passion for sustainability in food systems. She is a huge advocate for supporting local farmers, developing healthy relationships with food, and playing around with home fermentation. Though she went vegan after learning about the environmental impact of animal agriculture, her motivation to eat plants quickly evolved to include personal health and compassion for other beings.


In her own health and fitness journey, she used to yo-yo with 30 pounds up and down but was able to break that cycle and find peace and consistency. Now she is focused on building strength, endurance, and mobility to chase all the outdoor adventures she loves!

 
 

From an academic background, Elke graduated with top honors and a Bachelor of Science in Biochemistry. Her undergraduate research focused on the effects of peanut consumption on the gut microbiome and glucose regulation in individuals with prediabetes. She is now published in Clinical Nutrition, the official journal of The European Society for Clinical Nutrition and Metabolism, for this research.


All of this falls under Elke’s desire to understand metabolism and ultimately bring people closer to their food. She is stoked for this opportunity to help people become empowered in their own health and fitness!
